With 82 beautifully appointed bedrooms, a destination restaurant, café/bar, and exclusive private dining rooms, The Bedford Hotel Belfast will set new standards for hospitality in Northern Ireland.
Role Responsibilities
As Head Chef, you will be responsible for the efficient and effective management of all kitchen operations and team members. You will ensure the commercial success of the business by working within the established food and wage cost parameters. You will plan and implement new menus and systems to drive profitability, while maintaining the highest standards of food preparation and presentation. You will also ensure that all team members adhere to set specifications to deliver consistent quality at all times.
- Plan new menus and review regularly in line with seasonal demand and consumer trends.
- Motivate, train and grow the team in all areas ensuring check-ins are managed frequently.
- Identify, provide and evaluate departmental learning and development.
- Ensure great communication and working relationship with the rest of the hotel and management team.
- Ensure that staff receive a well-balanced meal twice a day for lunch and dinner.
- Ensure all specifications are followed to a high standard and the food, team and kitchen are consistent.
- Ensure that all the team are correctly dressed including any necessary PPE.
- Ensure a smooth and effective running of the kitchen.
- Maintain all Environmental Health Officer records and ensure the hotel is compliant at all times.
- Ensure COSHH and HACCAP guidelines are achieved and maintained.
- Regularly update and advise all front of house staff on allergens.
- Monitor key departmental costs in line with budget (food and wage costs).
- Draft all rotas so that staffing levels are in line with budget and business levels.
- Assist in recruiting efforts, including interviewing prospective candidates.
- Control the purchasing and maintenance of food cost and stock rotation.
- Support and action employee relations within the team and department.
- Abide by all company and legal food safety standards.
- Ensure all team members receive the correct food hygiene training in line with their level of responsibility.
